Well, yes! SAV1785 is a sparkling wine made of birch sap. Produced up north in Sweden, Åre.
The SAV1785 wine is fresh and catches the pure nature. In the glas its clear like water, with smooth light bubbles. In the nose you will notice the freshness, notes of pear and birch. It has a touch of sweetness, and a well-balanced acid level. The taste stays long, and you will notice the origin from the birch forest.
Drink it well chilled. Then you will really be convinced by its freshness. We recommend to serve at 8-9 degrees, but when the temperature increases the wine will develop. The oxygen will bring out the aromas and they will get more dominant. The notes of pears and birch will get stronger, the pressure will be a bit less in the bubbles and the perfect balanced sweetness will get clearer.
Food pairing.
We would drink this as an aperitif a warm sunny evening at the terras. Or pair it with seafood, fish or sushi. And why not a plate with antipasti, with a mix of cheeses and charcuteries. If you like, why not add a couple of frozen forest berries, like blueberries!
Only four ingredients.
Imagine that you what you have in the glas a product with less than five ingredients. Actually, on four! The birch sap, water, sugar and yeast. It can’t be purer than that. SAV1785 is a vegan & organic product and no pesticides are used in production.
Harvesting birch sap.
The birch sap is harvested in the early spring by drilling small holes in the tree trunk. The trees are not damaged by this and the trees will stay healthy and strong, and again next year they can again get harvested of new sap.
The sap is pasteurized and stored in containers to stay clean and fresh. The birch trees are not harmed in the harvesting process and the forest remains healthy and strong year after year.
Sparkling wine the Swedish way, ”Méthode Suédoise”
With SAV 1785 the production is combining two methods (that is used by creating champagne/sparkling wines) - "méthode traditionelle” and the "méthode ancestrale".
The producer, The SAV Winery, has named this method -” Méthode Suédoise”. That means that before the first fermentation (in the tank) is finished, yeast and sugar is added, the birch wine is moved into a bottle, where it becomes bubbly and reaches perfection.
